I love long weekends and it’s so rare that I get to actually enjoy a long weekend without feeling ‘obligated’ to go to Ottawa & see my parents and/or work the entire weekend. Well, I still worked but at least I had 2.5 days off!
Harrison’s mom & stepdad came to visit for the weekend and to see the new place. We hung out in Oakville, did some apartment shopping, made some delicious food. (specifically, chicken pesto & sun-dried tomato spaghetti, chocolate dipped strawberries & a fruit/cheese breakfast), went out to Pomelo (aka best thai food in Halton) and watched a Khloe & Lamar marathon. Okay, maybe not Harris & his stepdad but his mom & I watched at least 4 hours of the show. DON’T JUDGE ME!!
I got to spend Sunday with some friends. I finally got to see my friend Jess who I hadn’t seen for weeks and it was so nice to catch up. I also went to Toronto to see Lila & Ena and ate some delicious Korean BBQ & watched the newest episode of Walking Dead. OMG so good and intense, this season definitely trumps last mid-season.
I worked at Kids Day in Burlington today - although I was dreading it, it was actually a ton of fun and I couldn’t believe how huge the event is! I’m definitely taking my future kids there every Family Day. I couldn’t believe how much I wanted to partic
Overall, a really relaxing, fun & productive weekend.
On a sad note, I think Waffle likes Harrison more than me now. Not acceptable.

I made some pretty delicious chocolate dipped strawberries today. First time too! I even semi-mastered the white chocolate drizzle with the fork. (A few mistake blobs along the way..) Mmmm.. what better way to end a delicious Italian meal?

Great restaurant experience - elegant but cozy place in downtown Oakville and it was deeeelicious. We shared a calarami starter, I had linguini with scallops & shrimp tossed with spinach & cherry tomatoes in a spicy olive oil sauce and Harrison had ravioli with ricotta cheese & spinach in a rose sauce. I’m so glad we found a delicious Italian restaurant in Oakville - Hurrah!! They even gave me a beautiful red rose (every lady got one, fantastic surprise.)
Hope you all had a fantastic day but remember: it’s just one single day and you should show love to your friends, family & lover all the rest of the 364 days too!
Obsessing over: My new apartment, it’s seriously gorgeous. I love the large windows, secluded balcony, open space concept kitchen and the bedroom. It’s perfect for 2 people and very comfy & cozy! I’m almost done with the decorating but we still need new sheets & duvet covers among other random household items.
Working on: Way too much shit. I really need to organize my work life, I seriously cannot keep track of 3 events and it’s just going to keep getting harder closer to the date!! Must take a breather and regroup my thoughts/ideas. Anyone want to be my personal assistant? Pay is negotiable. [Sidebar: We got Connie Smith as an emcee for our Easter Auction which is exciting, she’s a news anchor and quite famous locally]
Thinking about: How much I dislike the Bachelor but how at the same time it’s such an addictive train wreck. I am really not a huge fan of Ben but I’m super pumped for the Bachelorette with Emily from Brad’s season, that should be wayyy more interesting. Usually I’m much more emotionally invested but I really couldn’t give two shits who he ends up with.
Anticipating: Tomorrow’s Valentine’s Dinner. I have no clue what to expect and I’m soooooo pumped. Is that too cliche?
Listening to: Young, wild & Free - Snoop Dog & Wiz Khalifa. This song totally reminds me of Europe - we blasted it every morning on the Topdeck bus along with this song.
Wishing: I could travel. I miss it soooooo much, I have such a huge yearning to travel but am soo broke. I’m counting down the days to a trip. I’m so sad that Orlando and/or Vegas didn’t work out so now we are aiming for a possible cruise and/or all-inclusive in June. It sucks that as long as I have my job, I won’t be able to travel March - June which are totally prime months to travel inexpensively.
Although I am quite proud to say that I have been cooking quite a bit lately! I really should start taking pictures of my accomplishments because I must say, they’re quite deliiiiicious.
Yesterday I surprised Harris with asparagus stuffed & bacon wrapped chicken breasts (from scratch!) with a medley of veggies and potatoes.
My shopping trip to the USA fell through today so I decided I would make the best of it and make it a gourmet day!
Today’s menu - all from scratch:
1. Breakfast: Bacon (the good ‘centre cut’ stuff that is has 5x less calories & fat than regular bacon!) and cheddar omelette with garlic & onion homefries
2. All day snack: Cantaloupe, clementine & blueberry fruit salad. Mmmm… see pic below. Ok so it’s not REALLY considered cooking but it’s so delicious and healthy so it deserves a spot on this blog.
3. Lunch: Vietnamese rice wrap ‘Fresh’ spring rolls - stuffed with vermicelli, hoisin pork, sliced cucumbers, mint & basil leaves and avocado. Dip in hoisin & sirachi and you have heaven in your mouth!
4. Dinner: Roast Chicken stuffed with herbs & lemon with a side of sundried tomato pesto sauce pasta. (To be made, verdict and hopefully a picture to follow)
Loving this cooking thing! It’s so much better, cheaper & healthier than eating out - really should do this more often!
A) I’m a little ashamed that I am such a huge fan of the show Revenge. It’s sooooo good but I worry that it will be hard to keep it interesting after a few seasons. Regardless, loving it so far!
B) Is everybody else counting down the days to the opening of the ‘The Vow’? The trailer itself makes me emotionally unstable so I worry about wailing in the movie theatre. Already done that once this month, should not revisit that awkward (but funny) moment.
C) Finally got off my lazy&&fat ass and went to the building ‘gym’ (4 machines does not a gym make) with lots of encouragement from Harrison. It actually felt great! Let this be the start of something new for a new period in my life.
D) Found a cheaper k-cup place than the one I’ve been going to. $2 a box cheaper which is amazing. Plus made a new business connection with and they will most likely be sponsoring our organization’s Easter Auction. YAY!
E) I love tacos. Harrison loves tacos. Who doesn’t like tacos? And I mean home-made tacos, none of that Taco Bell shit. Now, I’m not a healthy eater by any means but there are aLOT of ingredients I can’t even pronounce on the back of a taco seasoning package so I decided to try making my own taco seasoning thanks to this recipe. Verdict? SO yummy, a tad too salty but I can always adjust for the next batch. I really want to start making delicious & fresh recipes now that I have a kitchen full of all that I need! Anyways, I made it with chicken & topped it with avocado, spinach, cheese & cherry tomatoes and it was deeeeeeeelicious.
F) IIIIIIIIIIIIIII LOVE the new apartment. Love love love love. It’s almost complete and 99% of the unpacking has been done. It’s looking pretty fabulous in here! And the location is booooomb.
G) I love Waffle. I just… love him. I don’t care that I am the crazy cat lady, I just have to express how amazing he is. Best cat in the world. I’ve said it before and I’ll say it again - he is a dog in cat costume. Okay, enough before you throw me in an institution.
We caved and got cable. But we had to right? Superbowl? Only once a year? (More for Harrison’s sake than mine) I am happy that I will have TV for the Oscars and the basic selection comes with the Slice network which makes me happy!! (Millionaire Matchmaker is the best!) I’m just a tad sad that it doesn’t include the Food Network. :(
Oh well, $20/month makes me happy, it also means more for our vacation fund! We are planning to put $50 every pay cheque into a jar for our June vacation since we’ve decided to forego Orlando and/or Vegas. (Pantry, dresser, TV unit, coffee table & various household goodies = current broke status) Plus I have to save for NYC with the girls!! (YAY amykw & Jess!)
I keep missing award shows this year! Either I forget or I just didn’t have access to a TV at that point in time. Quite disappointing as I’m usually a ‘watch the red carpet and every second of the show’ kind of person.
Anyways, I have set 2 alarms on my phone for the Oscars on Feb 26 so in honour of the longest award show - a link about UP! AKA the best Pixar movie ever.
